Hello, my name is Gladys. I’m a proud mother of two princesses and happily married to a wonderful man. We live in the San Diego, California area, and I am thrilled to serve my friends, family, and community through this adventure. It all started with a desire to have bread in our home that was free from toxic ingredients. Healthy bread was something I hadn’t found before; even organic commercial breads contained so many ingredients that sometimes caused skin reactions and inflammation in my stomach. Last year, I decided to take matters into my own hands and started making sourdough bread. With little expectation, I began fermenting the flour. To my delight, the starter (natural leaven) became active and showed signs of successful fermentation. I thought, “This is a good sign—let’s make bread!” Like all new endeavors, there was a learning curve, but little by little, I perfected my technique. Eventually, I offered my bread to my closest loved ones. To my surprise, they loved it, and that’s when the idea of sharing organic, delicious, artisanal sourdough bread with the community was born. I’ve come to appreciate how tasty and easy-to-digest sourdough bread is. It has completely transformed my relationship with bread—I no longer feel physically uncomfortable or regret eating it.
