Hi, I’m Cassie- a long-time gluten-free baker and mom of three daughters on a mission to make better for you, gluten free food worth eating. This journey started many years ago when my younger brother was diagnosed with Celiac Disease. I’ve been primarily gluten-free for over 15 years, learning to re-create family favorites (with wholesome ingredients) that actually taste good. When one of my daughters began experiencing health issues that dramatically improved after healing her gut and removing gluten, I set out to create a gluten-free bread that didn’t taste dry, dense, or chalky—a bread my family would actually be excited to eat. After months of experimenting, I created an organic, gluten-free sourdough sandwich bread that I am proud of (and that my family loves!) It’s soft, flavorful, refined-sugar-free, seed-oil-free, and baked in a 100% gluten-free kitchen to prevent cross-contamination. The name 1:11 Sourdough Co. comes from Ephesians 1:11—a reminder that God works all things according to His purpose. Every loaf is made with gratitude, care, and a desire to nourish both body and soul. Today, I continue to test new flavors and gluten-free treats to share. Being gluten free is tough- you often sacrifice flavor for dry, chalky baked goods, or breads and treats that are ultra- processed and loaded with sugar. My hope is that my bread will provide more gluten free families with the ability and inspiration to enjoy their food while still nourishing their families and without sacrificing quality ingredients or taste.
