(Anything under 20 is assumed safe for a celiac). *9 out of 10 of our customers tolerate our bread with no issues. Occasionally we have a customer who is not able to digest one of our products with side affects for unknown reasons. We suspect it is the side effect of the fermentation process making our bread "sour" (thus called sourdough) with active cultures not used to certain individuals bodies which causes digestive issues. Not having anything to do with gluten itself. Accordingly, we strongly encourage eating our breads and other offerings in moderation at the beginning to ensure you are not allergic or sensitive to ingredients used in our GF flour formula. Purchasing our breads means you understand the risk. *ingredients: Our GF flour blend is mixed with organic brown rice flour, organic tapioca flour, organic potato starch, organic psyllium husk, organic millet, organic sorghum, sea salt, and purified water.
